Oven Pancake


4 large eggs
1 cup sifted flour
1 cup milk
1/4 tsp salt
1/2 tsp nutmeg
2 T. unsalted butter
confectioners sugar
jam

Heat oven to 425. Whisk eggs, flour, milk, salt and nutmeg until well combined. Batter may be slightly lumpy (even better if batter is made the night before and refrigerated over night). Melt butter and pour into 9 by 13 pan. Pour batter into pan and put in heated oven. Bake until golden brown and puffy (10-12 minutes). Serve with powdered sugar and jam.

Okay, I know, I am commenting on all your posts, but this has been a family favorite forever. Whenever there was a birthday or special day, we had this--the German Pancakes. So yummo. My favorite pieces are the corners that collect a ton of the butter and get crispy around the edges.
