This is just a "top-it-yourself" bruschetta. You can flavor it to taste. We prefer more balsamic vinegar than olive oil, try equal parts at first, then adjust.
Italian Salsa
5-6 tomatoes, diced (we used a variety of heirloom tomatoes from Matt's Garden)
8-10 fresh basil leaves, chopped
3 cloves garlic, finely chopped
1/4 cup olive oil
1/3 cup balsamic vinegar
pinch coarse salt
few turns of the pepper mill
Combine tomatoes, basil and garlic. Drizzle with olive oil and vinegar. Season with salt and pepper.
Serve with a thinly sliced, toasted baguette.

What variety of heirloom tomato?
We save our heirloom seeds every year as well. You seem exceptionally fond of this tomato, so I thought I'd ask.

my brother in law, Matt grows an incredible vegetable garden. starts everything from organic seeds. this year, we planted some of his seedlings (not nearly as many as I should have, so I supplement straight out of his garden).
In this salsa, we used green zebra, black krim, tigerella, purple cherokee...
we've also been enjoying matt's wild cherry and oaxacan pink.
my favorite this year have been the green zebra. sweet but a little tart.

This really looks tasty. How much more balsamic vinegar do you use? I love it and would prefer more of it than the equal parts.
love balsamic vinegar...will do what you did to add the extra tang in dressing...yum.

i started with the 1/4 cup oil 1/3 cup vinegar, but i sprinkled a bit more vinegar to taste.
Megan since our ward hasn't signed up dinners for us, will you bring us a jar of this salsa when you bring us the baby dinner? I don't think Lindsey can handle to much more of my cooking.

I made this for dinner tonight. Unfortunately, no garden fresh tomatoes, but they were really ripe and red. This recipe was scrumptious! My six year old ate my husband and me under the table! A total winner in my book. Thanks!
