This is one of my favorite cakes. I make it year round. No need to think of pumpkin as just an autumnal ingredient.
It is perfect for a party or potluck as it fills a half sheet pan, plus I generally have everything needed on hand.
Pumpkin Squares
4 eggs
1 2/3 cups sugar
1 cup oil
2 cups canned pumpkin
2 cups flour
2 tsp baking powder
2 tsp cinnamon
1 tsp salt
1 tsp baking soda
Preheat oven to 350 degrees F. Beat eggs, sugar and oil until smooth. Add pumpkin. Mix until blended. Add remaining ingredients. Mix.
Grease the bottom of a half sheet pan. Pour batter in pan and bake for 25-30 minutes, until cake tester inserted in center comes out clean.
Frosting
3 oz cream cheese (room temperature)
1/2 cup butter (room temperature)
2 cups powdered sugar
1/2 tsp vanilla
zest of one orange (can omit, but I love the flavor)
Mix together and frost cooled cake.
Need a dessert for this Sat. night...This sounds good to me and shouldn't require a lot of my time..

I've never understood why people think of pumpkin as seasonal! This looks delicious!
